Good evenning.

I have some stamps from German Empire with perfins and I have
doubts how to recognize it exact color (and value), because in the catalog (STW) there are 3 different colors: carmine, brownish red, and carmine rose.

Your stamp is watermarked; in the Michel catalog it is #90. Because it has a 1906 cancel it is also a Peace printing. No way to determine the color from your scan. Also, the Michel catalog only recognizes one tone (shade) of this stamp.

This stamp could be of interest to a perfin collector.

The stamps were printed before WW1 (peace) and during WW1 (war)
The war printings are not printed as well as the peace printings

Germania mentions the 1906 cancel because it means your stamp was canceled before the war started, therefore cannot be a war printing

You need multiple examples with various year cancels to identify the differences in the printings
