The United Postal Stationery Society has several publications that might meet your needs:

Western Cover Companies 1850-1890 4th ed
I am not personally familiar with this title

Postal Stationery of Mexico
This has an excellent study of the Wells Fargo envelopes used in Mexico. I have this book and would be willing to provide you with scans of a couple of sample pages if it would help.

from the UPSS - as noted immediately above is a terrific resource.

I have the 3rd edition, HB, and it devotes about 125 pages just to Wells Fargo, fairly large format book pages, many literally packed with information.

I was going to get the Nathan book on Western Express Franks, but I believe this has likely taken its place. Someone will correct me if I'm mistaken.

(PS - I am not a fan of the original Oscar Thomas book as it was rushed into publication because Oscar was terminally ill. Hopefully the new edition will include extensive corrective material). I have not seen the new edition and am not sure it has been published yet.
