This is on the back of a cover as the receiving cancel.
Is the cancel at the bottom saying car, cargo, or cart?

Although Len Piszkiewicz's incredible tome "Chicago Postal Markings and Postal History", would point to this being from 1877-1881 (page 359).
Helpful hint: when seeking a postal history interpretation, showing the entire front and back will often be helpful to develop a full interpretation.

I have heard about boat and steamship mail, but, carrier, were there carriers back then too? What did they carry, birds, since airplanes were still in development?

Yes, seeing the front of the cover would help show this was an overland rather than a sea cover.

here is the front. It doesn't state the date seller stated that.

as in received in the "carrier" section of the Chicago PO who then took it out for delivery.
This cover would have traveled by rail, which is not connected to any of its markings.
Seller not very good at determining a date.
