Curious why there is a straight edge on the left but there is evidence that there was another stamp to the left. Would the straight edge not signify the edge of the sheet?

The straight edge is where the printing sheet was to be sliced into post office sales panes, a Left and a Right (yours is from the Right). Below is an example of the cut as it should have been without cutting into the stamp design of either pane:
