I think that these are training stamps for future office workers. Attractive!

The text on the stamps:
'practical school of commerce'.
The text on the paper:
'Value 100 francs'
'Mr. Matin
jeweler'
'Nancy
Meurthe-et-Mosselle'.

GeoffHa is absolutely right: teaching material.
They were having their own coins as well, for same purposes ...

Thanks.
Do training stamps are considered cinderellas?
Any info on the date when they were used?

If they're used by the post office, they squeeze into "Back of Book". Maury lists cours d'instruction stamps. I'd regard these as cinderellas, although I find them more interesting than a standard legitimate issue with an "annule" overprint.

Thanks.
Looking at the title of the catalogue, they are called fictious stamps.
